: Summer Meet Menu Planning
Bald Eagle 08-01-2006, 08:16 PM Seeing as how we ended up with a sinful excess of food at the Spring Meet community meal, how about everybody signing up for:
Munchies and Hors D'oeuvres (4+)
Entrees (5+)
Side Dishes/Salads (3)
Desserts (2)
Other?
We will probably have about 24 people for the Saturday evening banquet. If we split this up evenly and everybody brings something for 6-8 people, we should have plenty of food without throwing away enough to feed a small Third World country.
This doesn't mean everybody needs to bring something different. For example, if a couple of people bring ribs, and a couple more bring chicken, and a couple bring...well...errr...filet mignon, we'll have entrees covered. Everybody brings their own beverage and any personal food items they can't live without.
This post is just something to get the ball rolling. Add your comments and suggestions and post what you're planning to bring. I'll update this post with a tally of the menu committments. So far...

LOVE GUS'S HOT DOG SAUCE!!!! BRING EXTRA FOR ME!!!
Great idea!
cai88 08-02-2006, 04:37 PM maybe we should have a Gus's hot dogs meet complete with hot dog eating contest!!
jurneez 08-02-2006, 09:29 PM maybe we should have a Gus's hot dogs meet complete with hot dog eating contest!!
Too funny - Hot dog Eating contest......I can just see it now, and after when the other EOC chapters read about it, I'm sure with full pics, They're going to think very strange things about us eastern region folks. First we have a to kill for hot sauce competition complete with formal awards signed by the Gods (God), and now we stuff our strange misfits faces.......Well, I just love it!
I ask ...would anyone rather be at some stuffy gathering like an aniversary dinner or uncle Horraces Birthday? No, of course not, I didn't think so.
God I love this gang!

I was thinking more along the lines of a nice big helping of POUTINE! The kind with White chedder!
-Dan
Tim Vance 08-04-2006, 01:42 PM You have no idea how long I debated about whether or not I should reply....
White cheddar on POUTINE!!!????? eewwwww
ok, I don't want to sound like a snob, but, if you put cheddar on it, it's no longer Poutine, it's just fries and gravey with cheese....
It wasn't until we lived in Eastern Ontario that we truly learned what REAL poutine is! They make it with fresh curds from the local dairies, and real beef gravy, none of that canned brown sauce..hhhhhhmmmmm
Um, honey, what's for dinner tonight????

So... will you be bringing the fixen's so that you can show this yank' what it's supposed to taste like?:)
ramblerdan 08-04-2006, 04:03 PM I'll bring whatever the group thinks is necessary, including money.
Not pie, though. Had to throw most of it away last time.
Tim Vance 08-04-2006, 09:57 PM So... will you be bringing the fixen's so that you can show this yank' what it's supposed to taste like?:) Deep fried potatoes are a bit hard to do over a fire....:)

Hey! You can bring a pie...it's called dessert.
We're kind of holding off to see which food group needs a contribution.

jstatik 08-08-2006, 03:31 PM If there is still room for entree and/or munchie, we were thinking of bringing Linguica with us.

Plenty of room in both catagories...and I'd like a nibble of linguica Let's see how the menu develops then decide where it fits.
Gaily 08-10-2006, 07:26 PM Only 2 weeks to go guess it's time I start getting ready. I'll do chicken with different marinates.
I'm so ready for a long weekend.
robertkeirstead 08-14-2006, 05:19 PM Karen and I will bring potato salad... and some snacks.... and some fire wood...

mysticfalcon 08-15-2006, 03:54 AM someone in the other thread mentioned utensils. I think I'll voulteer for that since If I burn them Ive got some serious problem.

peruytu 08-16-2006, 10:44 AM Do you guys need me to bring anything? Maybe I can bring some sodas?
Bald Eagle 08-16-2006, 09:26 PM Do you guys need me to bring anything? Maybe I can bring some sodas?
We really need to fill up the menu catagories in post # 1 on this thread. If anybody is cooking challenged, contact somebody who has already volunteered an item and send them a PM to see if you can provide some cash to up the quantity of whatever they're bringing...and help them put it together on Saturday night.
Just post something here so everybody knows what's going on.

hmbhuss1 08-16-2006, 11:24 PM We'll bring veggies and hummus and dip and cheese and crackers. There seems to be a distinct lack of non-meat items although it's weird that we would be bringing this up given that we're like total Nebraska meat hogs...
Uncle MIke 08-16-2006, 11:58 PM MS GAIL:
How about if I join you in the chicken department? I made a great marinated "jerk" chicken today for lunch (what a surprise!) I doubt if you want to foot the chicken bill for this size group, so have your people get in touch with my people and let's do this!:D

My people are on vacation so you will have to cover the bill. :D
Sure join in. I was bring chicken legs. Figured I would do differenct marinates teriyaki, lea & perrins & bbq sauce. Yours sounds good to.
Can't wait.
Bald Eagle 08-17-2006, 12:03 PM Excellent!
Although I haven't confirmed this with Screaming Eagle (yes, she said I can use that "handle" after all) I think I can talk her into making the salad we brought to the Spring Meet...mixed greens, asparagus, walnuts, feta cheese with balsamic vinegarette. It was bare to the bowl after the last community meal.

Word to the wise: She definitely wasn't happy with me referring to her as "Shopping Eagle" (something I had picked up here somewhere) at the last campout...

Unless I missed something along the way, the only potato salad entry is yours, so don't change it.

peruytu 08-23-2006, 09:32 AM My girlfriend is going to make some kielbasa, is that ok? If so, how much do you think I need to bring? I want to bring enough for everybody.

Don't try to bring enough for everybody, you'll be cooking for 24 people or so. If you bring enough for 6-8 people that'll cover it. Not everybody will eat every item. Also depends how you do it. If you just grill 'em and cut 'em up, you can cut them small and more folks can have a sample. If you do kebobs, some folks will have those, some will have Dan's shrimp kebobs. Maybe it'll end up as an hors d'ouevre like jstatik's linguica...have to see how it plays out when we put it all together.
Just trying to avoid the Spring Meet scenario when we threw away a sinful amount of food because people just couldn't eat any more.

Bald Eagle 08-23-2006, 01:34 PM Screaming Eagle just told me she's also going to make some of her salsa with corn and black beans. It'll be pretty mild, so jurneez and Uncle Mike will have to bring their fire sauce.
Looks like we could use another dessert (See post #1 on this thread).

I think it's very commendable that you guys are trying to keep excessive amounts of food from going to waste. Good luck
Our Death Valley trip had a Pot Luck dinner that produced more food and good eats than we ever could of imagined. We had so much food that there were three rounds of dinner with multiple entrees and this went on for hours.
We had more grills and stoves going than a Boy Scout Jamboree.
Here's a sample of the foods that I can remember...
Spaghetti ( oh so good)
Beef Enchiladas (divinely baked in an oven)
Grilled Teriyaki Chicken Wings
Sweet Beef Stew (amazing stuff)
BBQ Chicken ( marinated for days in advance)
Rigatoni and Sausages (with a roasted tomatoe, garlic and pepper sauce)
BBQ Ribs (I never even got to those)
Chinese Chicken Salad (a big hit)
Chinese Chicken Egg Rolls (to die for)
Designer Sausages (home made from a secret family recipe)
Countless brands of beers, Margaritas and Tequila Sunrises
I won't even bother listeing the deserts which were devine and meals unto themselves..
The food just kept coming and it never seemed to stop.
People had finished eating, and were completely stuffed, but still more incredible food continued to be served up.
It wouldn't of been so bad if the food was so so, but it was all scrumptously delightful stuff!
Although many tried, there was no way to keep up with it all.
But good luck with trying to keep your meals under control.
We failed miserably at it. :-o
Enjoy your outing and may the rain stay away...
You guys deserve a bright sun shiney week end!
Take lots of pics !!!!!
and if any of you guys are in the neighborhood do drop by....
