I recently noticed the "Maintenance Required" yellow light flashing for about five seconds when I start my E. I don't remember this always being the case but it might have been. I figure if maintenance was really required it would stay flashing or lit.

Is this normal?

See your Owner's Manual: it's reminding you you are approaching the mileage for the regular service visit.

Did your E recently hit 7500 miles?

If so this is totally normal....there are several posts about this.....it is simply a reminder about your upcoming 10,000 mile service. (plenty of information on Honda's owner link and in your owner's manual.

Oh-no, not another E with a blinking Maint req'd light. Watch out man, if that light goes on solid, it means your E just blew it's engine and that isn't covered by the warranty!!
