No windshield related theories coming to mind. Is it definitely at-speed and wind-force related?
Other watery sound issues I can think of might be the water pump, or, if you're running the defroster alot (which turns the compressor on) a build up of condensation in the fan area perhaps due to a blocked drain hose.
Grasping at straws here...

I bet one of the exterior trim pieces isn't on exactly the same as it was before the replacement, and water and wind are whooshing around somewhere that they did not before.

This may or may not help. I had to have my windshield replaced, After they did it, I had a wind noise. I took it back about 5 times before it was fixed. It turned out that they replaced the plastic trim pieces at the base of the windshield, problem solved. I think it has to do with the plastic pins that hold them in place. I don't think they are designed to be taken on and off.
If I had to take a guess............
I'd say that the cowl area is not draining.........
By cowl area I mean the area underneath the plastic trim,
at the base of the windshield.............
See it once in awhile with Dodge Caravans, not that THAT
means a squat......Just my $0.02....I'll sit back down and shut my
pie hole.......Let us know the FIX!!!!!!!!!!!!!
