Question is: Stock Elements tires are 215s. How much wider can you go before you rub?

It depends on the offset, but 245-255 seem to be the widest.

Yes, but the dubs he had on it changed the offset quite a bit. What Chums mentioned applies to the stock wheels. I generally don't recommend messing with offsets because it changes bearing and axle loading characteristics, and usually becomes a maintenance and reliability problem.
