Had leather upholstery installed in my E today, and replaced the original driver's seat foam at the same time. My original seats were actually holding up OK (just one small crack at the driver's seat left side), but I decided to do the leather. Got the new covers from leatherseats.com and had a local guy install them. I ordered an extra yard of material to cover the armrest and he added some padding, so it's a lot more comfortable than it used to be.

The new upholstery was about $700 from leatherseats.com. Now--just to be clear, the entire seat facings on the front seats are leather, the sides and back are matching vinyl. The back seats are mostly vinyl (only the bottom and back insert sections are leather). This is similar to most new car interiors. There's a more pricey version if you want more leather, and there's a diagram on their site which makes it clear.
You CAN install it yourself if you're handy: I was going to try, but once I read up on disassembling the rear seats I decided to have someone experienced do it. Contact multiple shops for a quote as there was huge price variation. My installer charged $500--reviews on Yelp helped me find him, but I was quoted as high as $800. It will likely be less outside of San Francisco.
So, just about $1200 with the install.
And I added South Coast Carpets ($200). And just replaced all my stock speakers ($225).... And replaced the shift knob and boot with leather ($65). And am replacing the "park by braille" back bumper fascia ($45)......This little update is adding up. But I only have 36K miles on my E and plan to keep it for a really long time.
