I hadn't though about this unitil I saw someone else mention it, but the roof in the front may very well be what gives the Element enough rigidity to go without B-pillars, if so I wouldn't want to weaken that area with a sunroof. Just speculation. Sounds like a cool idea though, it would be nice!
