can anyone tell me if this would work? and, if so, about how much it would cost?
SC center console in 2005 EX?

Yes, you can install the SC Center Console in a 2005 EX. It has been done many times over. I have personally done the installation myself. if you do a search, you will find many tips and where to purchase parts. Most of the indviduals who installed the console, purchased them throught eBay. Good luck

I am in the process of doing this right now and it is a little more extensive in a 2005 that it would be in an 07 or older but it does still fit.

It has been done umpteen times by members here, however, it is not an inexpensive mod.
do a search and you can find plenty of threads on this subject, I seem to remeber one that had a parts list, install diagram, etc.
